Gluten-Free Banana Bread

Once upon a time, I found a recipe for Gluten-Free banana bread, and it was just okay. Each time thereafter, I tweaked it. And then one day... I ran out of Pamela's bread mix... I scoured my cabinet and came across good ole Bob's Redmill gluten-free 1 to 1. I shrugged my shoulders and measured in the needed amount, and by golly, it was scrumptious! So I share it with you today. You can probably skip the blender part if you don't have one, or don't feel like using it. I have a Blend Jet which I love and use daily. Well, we actually have two.
